Title: Fassoulatha (Bean Soup)

Yield: 6 Servings

1cLarge, dried white beans
2 Quarts of water
1cSliced celery (1/2" Pieces)
2cChopped onion
4 Medium carrots, cut in 1/2"
  Slices
1/2cChopped parsley
1tbTomato paste
1cOlive oil
1tbCrushed oregano
3tbWine vinegar
